W2: Week 2: Testing Methods & Microbiological Analysis
Proximate analysis, chemical testing, instrumental analysis, microbiological testing - total plate count, coliform, yeast and mold, pathogens, rapid testing methods, result interpretation.
W3: Week 3: FSSAI, HACCP, GMP/GHP & ISO 22000
FSSAI regulations and licensing, food safety standards, HACCP principles and plan development, GMP, GHP, sanitation, CIP and COP, ISO 22000 overview, food safety management system (FSMS).
W4: Week 4: Audits, Traceability, Live Projects & Certification
Audit types and preparation, internal audit, documentation and record keeping, traceability, recall management, supplier quality management, live projects - complete QA manual, HACCP plan, audit checklist, testing report, complete documentation, viva-voce examination, certificate distribution.
